Ingredients for Grilled salmon steaks with cilantro-garlic yogurt sauce

  • vegetable oil (for grill)

  • 2 serrano chiles, chopped

  • 2 garlic cloves, peeled, minced

  • 60 g coriander leaves with tender stems

  • 120 ml full-fat Greek yogurt

  • 15 ml extra-virgin olive oil

  • 5 ml honey

  • 680 g bone-in salmon steaks

  • kosher salt, to taste

How to make Grilled salmon steaks with cilantro-garlic yogurt sauce

  1. Preheat the grill to medium-high heat and lightly oil the grate.

  2. Remove and discard the seeds from 1 chilli.

  3. In a blender, purée both chillies, garlic, coriander, yogurt, oil, honey, and 60 ml of water until smooth; season well with salt.

  4. Transfer half of the sauce to a small bowl and set aside for serving.

  5. Lightly season the salmon steaks with salt.

  6. Grill the salmon for about 4 minutes, turning once or twice, until the flesh starts to turn opaque.

  7. Continue grilling, turning often and basting with the remaining sauce, until the salmon is opaque all the way through, about 4 minutes longer.

  8. Serve the salmon with the reserved sauce alongside.
