Ingredients for Mom's stuffed peppers
450 g minced beef, browned
15 ml minced garlic
120 g fine bread crumbs
60 g grated Parmigiano-Reggiano
60 ml chopped fresh parsley
3 fresh basil leaves, finely chopped
240 ml fresh tomatoes, precooked (or canned tomatoes)
2 eggs
60 ml olive oil
8 medium peppers, stemmed, cored, deseeded
15 ml olive oil, for drizzling over peppers before baking
240 ml tomato sauce
How to make Mom's stuffed peppers
Preheat the oven to 200°C (fan) or 220°C (conventional).
Combine the minced beef with all the other filling ingredients, then stuff the peppers generously until they are full, allowing them to bulge slightly.
Stand the peppers upright in a casserole dish and drizzle olive oil over them.
Bake for 15 minutes at 200°C (fan) or 220°C (conventional).
Reduce the temperature to 190°C (fan) or 200°C (conventional) and pour the tomato sauce around the peppers.
Continue baking until the peppers are browned, about 30 minutes.
Serve directly from the casserole dish at the table.
