Ingredients for Macaroni and cheese for a crowd

  • 450 g dry small elbow macaroni, cooked and drained

  • 30 g cornflour

  • 10 g salt

  • 2.5 g ground black pepper

  • 600 ml evaporated milk

  • 600 ml water

  • 60 g butter or margarine

  • 340 g shredded sharp cheddar cheese

  • 120 g shredded Monterey Jack or hot pepper Monterey Jack cheese

  • 1 pinch paprika

How to make Macaroni and cheese for a crowd

  1. Preheat the oven to 190°C (fan 170°C).  

  2. Grease a 33 x 23 cm baking dish or disposable baking tray.  

  3. In a large saucepan, combine the cornflour, salt, and pepper.  

  4. Stir in the evaporated milk, water, and butter.  

  5. Cook over medium heat, stirring constantly, until the mixture comes to a boil.  

  6. Boil for 1 minute, then remove from heat.  

  7. Stir in the cheeses until melted and smooth.  

  8. Place the cooked macaroni into the prepared dish.  

  9. Pour the cheese sauce over the macaroni and stir to coat evenly.  

  10. Sprinkle with paprika.  

  11. Bake for 20–25 minutes or until bubbly and golden.
