Ingredients for Chipotle-style cilantro-lime rice

  • 120 g white jasmine rice

  • 5 ml kosher salt

  • 45 g finely chopped coriander

  • 30 g unsalted butter, softened

  • 15 ml fresh lime juice

How to make Chipotle-style cilantro-lime rice

  1. Rinse the rice several times under cold water until the water runs clear.  

  2. Drain the rice well in a fine-mesh sieve.  

  3. Transfer the rice to a medium saucepan.  

  4. Add salt and 300 ml of water, then cover the pan and bring to a boil over high heat.  

  5. Reduce the heat to low and cook, covered, until the rice is tender and the liquid is absorbed, about 18–21 minutes.  

  6. Remove the saucepan from the heat and let it stand, covered and undisturbed, for 10 minutes.  

  7. Use a fork to fluff the rice, then gently fold in the chopped coriander, butter, and lime juice.
