Ingredients for Gravy mayo
120 ml mayonnaise
30 g white miso
15 ml fresh lemon juice
240 ml chilled leftover gravy
30 g chopped chives
15 g chopped thyme
kosher salt, to taste
freshly ground pepper, to taste
How to make Gravy mayo
Whisk together the mayonnaise, miso, and lemon juice in a medium bowl, breaking up the miso with the whisk, until almost completely smooth.
Add the gravy and whisk vigorously, breaking up any lumps, until the mixture is nearly smooth.
Stir in the chives and thyme, then season with salt and pepper to taste.
Prepare the gravy mayo up to 1 day in advance. Cover with cling film and chill in the refrigerator.
