Ingredients for Gravy mayo

  • 120 ml mayonnaise

  • 30 g white miso

  • 15 ml fresh lemon juice

  • 240 ml chilled leftover gravy

  • 30 g chopped chives

  • 15 g chopped thyme

  • kosher salt, to taste

  • freshly ground pepper, to taste

How to make Gravy mayo

  1. Whisk together the mayonnaise, miso, and lemon juice in a medium bowl, breaking up the miso with the whisk, until almost completely smooth.

  2. Add the gravy and whisk vigorously, breaking up any lumps, until the mixture is nearly smooth.

  3. Stir in the chives and thyme, then season with salt and pepper to taste.

  4. Prepare the gravy mayo up to 1 day in advance. Cover with cling film and chill in the refrigerator.
