Ingredients for Almond and raisin agrodolce
40 g golden raisins, chopped
60 ml white wine vinegar
80 ml extra-virgin olive oil
40 g skin-on almonds, chopped
1 small red onion, very thinly sliced, rinsed, patted dry
2.5 ml finely grated lemon zest
1.25 ml crushed red pepper flakes
kosher salt
30 g parsley leaves with tender stems
How to make Almond and raisin agrodolce
Place the raisins in a medium bowl and pour over enough vinegar to cover them. Let them sit for 10 minutes, stirring occasionally, until softened.
Meanwhile, combine the oil and almonds in a small frying pan set over medium heat. Cook for about 5 minutes, stirring occasionally, until the almonds are golden brown. Transfer to a small bowl and allow to cool.
Mix the softened raisins, onion, lemon zest, and red pepper flakes into the cooled almonds; season with salt. Let the mixture sit for 10 minutes.
Just before serving, toss in the parsley.
The agrodolce (without lemon zest and parsley) can be prepared up to 3 days in advance. Cover and chill in the fridge, then bring to room temperature before using.
