Ingredients for Simple spinach and ricotta gnocchi
1 tsp finely grated lemon zest
60 ml lemon juice
30 ml extra virgin olive oil
sea salt, cracked black pepper
300 g baby spinach leaves

How to make Simple spinach and ricotta gnocchi
Place the lemon zest, lemon juice, oil, salt, and pepper in a medium bowl. Mix to combine and set aside.
Put the spinach in a large heatproof bowl, cover with boiling water, and set aside for 1 minute.
Drain the spinach, then place it in a clean tea towel and squeeze to remove excess liquid. Finely chop the spinach.
Add the chopped spinach to the gnocchi dough and mix until well combined.
Lightly dust a clean surface with flour. Divide the dough in half and roll each piece into a log about 3 cm wide.
Slice the logs into pieces approximately 2 cm thick and set aside on a lightly floured baking tray.
Cook the gnocchi in two batches in a large saucepan of salted boiling water for 2–3 minutes, or until they rise to the surface.
Remove the gnocchi with a slotted spoon and place them on a serving plate.
Top the gnocchi with the lemon oil, rocket, and Parmesan before serving.
