Ingredients for Chewy chocolate chip cookies
200 g cold unsalted butter, chopped
175 g brown sugar
165 g caster sugar
5 ml vanilla extract
30 ml full-fat milk
1 egg
300 g plain flour
1 g baking powder
1 g bicarbonate of soda
1 g table salt
300 g dark chocolate, chopped
How to make Chewy chocolate chip cookies
Preheat the oven to 180°C (fan) or 190°C (conventional).
Place the butter and both sugars in the bowl of an electric mixer. Beat on low speed until just combined.
Increase the speed to medium and beat for 8 minutes until the mixture is pale and creamy, scraping down the sides of the bowl as needed.
Add the vanilla, milk, and egg, then beat for 2 minutes until light and fluffy.
Sift in the flour, baking powder, baking soda, and salt. Beat until just combined.
Fold in the chocolate until evenly distributed.
Roll heaped tablespoons of the mixture into balls and place them on lightly greased baking trays lined with non-stick baking paper.
Bake for 12–14 minutes until golden brown.
Allow the cookies to cool on the trays for 5 minutes before transferring them to wire racks to cool completely.
