Ingredients for Jalapeño poppers with smoked gouda

  • 12 large jalapeño chiles

  • 115 g cream cheese, softened

  • 120 g finely shredded smoked Gouda

  • salt, to taste

  • chopped fresh coriander, for serving

How to make Jalapeño poppers with smoked gouda

  1. Start the coals or heat a gas grill to medium for direct cooking. Ensure the grates are clean.

  2. Cut the jalapeños in half lengthwise, keeping the halves connected at the stem. Use your finger or a pointed spoon (such as a grapefruit spoon) to remove the seeds and white ribs from the inside. Wear rubber gloves or be careful not to touch your skin after handling the chiles.

  3. In a medium bowl, combine the cream cheese and Gouda with a pinch of salt. Mash until well combined. Evenly fill the jalapeño halves with the mixture using a small spoon, then press the halves back together to close. You can prepare and refrigerate the filled jalapeños up to a day in advance.

  4. Place the jalapeños on the grill directly over the fire. Close the lid and cook for 5–10 minutes, carefully turning once, until the peppers have softened and browned (it’s fine if they char in spots) and the cheese has melted.

  5. Transfer the cooked jalapeños to a platter, sprinkle with cilantro, and serve.

  • Honey-Orange Jalapeño Poppers: In Step 3, fill the jalapeños with a mixture of 170 g crumbled fresh goat cheese (approximately 170 g), 2 tablespoons honey, 1 tablespoon grated orange zest, and salt to taste.

  • Jalapeño Poppers with Pimento Cheese and Pepper Jelly: In Step 3, fill the jalapeños with a mixture of 110 g grated extra-sharp cheddar cheese (approximately 110 g), 60 g chopped drained pimentos, 60 g mayonnaise, and a dash of Worcestershire sauce. Serve topped with a dab of pepper jelly.

  • Pesto Jalapeño Poppers with Mozzarella: In Step 3, fill the jalapeños with a mixture of 170 g shredded mozzarella (approximately 170 g) and 60 g basil pesto. Serve topped with fresh basil leaves if desired.
