Ingredients for My mother's butter, tomato, and onion sauce

  • 900 g ripe tomatoes, or 720 g canned whole peeled tomatoes with their juice

  • 1 medium sweet yellow onion, chopped

  • 75 g butter, softened

  • 7 g salt

How to make My mother's butter, tomato, and onion sauce

  1. If using fresh tomatoes, peel them. Coarsely chop the fresh or canned tomatoes. Trim both ends of the onion, peel it, and cut it in half lengthwise.

  2. Place the tomatoes, onion, butter, and salt in a 4 to 5-litre saucepan over medium heat.

  3. When the tomatoes begin to bubble, lower the heat to a gentle simmer. Cook for about 45 minutes, stirring every 10 to 15 minutes, until the sauce has reduced and is no longer watery.

  4. The sauce is ready when the butter has separated from the tomatoes and there is no remaining liquid.
