Ingredients for Radicchio with creamy tahini and salted sesame seeds

  • 45 ml toasted sesame seeds

  • flaky sea salt

  • 1/2 small red onion, very thinly sliced

  • 60 ml fresh lemon juice

  • kosher salt, freshly ground pepper

  • 80 g plain full-fat Greek yogurt

  • 15 ml tahini

  • 2 medium or 4 small heads of radicchio, leaves separated, large leaves torn

  • olive oil, for drizzling

How to make Radicchio with creamy tahini and salted sesame seeds

  1. Lightly crush the sesame seeds in a mortar and pestle, or place them in a resealable cling film bag and crush with a mug. Transfer the crushed seeds to a small bowl. Add a few generous pinches of sea salt and toss to combine. Set aside.

  2. Toss the onion and lemon juice together in a large bowl, then season with salt and pepper. Allow to sit for 5 minutes to lightly pickle.

  3. Meanwhile, mix the yogurt, tahini, and 30 ml of water in another small bowl until smooth. Season the tahini dressing with salt and pepper to taste.

  4. Add the radicchio to the bowl with the onion mixture and drizzle with oil. Toss to coat and season with salt and pepper.

  5. Transfer the salad to a serving platter and drizzle with the tahini dressing. Finally, sprinkle the reserved salted sesame seeds over the salad.
