Ingredients for Sam's spring fattoush salad

  • 2 pieces lavash bread

  • 75 ml extra-virgin olive oil

  • kosher salt

  • aleppo pepper (optional)

  • 60 ml lemon juice

  • 1 clove garlic, peeled, minced

  • 5 persian, armenian, or japanese cucumbers, thinly sliced

  • 5 radishes, thinly sliced

  • 3 spring onions, thinly sliced

  • 120 g dill fronds

  • 120 g mint leaves

  • 75 g feta, preferably sheep’s milk

How to make Sam's spring fattoush salad

  1. Preheat the oven to 180°C (160°C fan).

  2. Brush both sides of the lavash with 45 ml of olive oil. Arrange the lavash on a baking tray and sprinkle with salt and Aleppo pepper, if using.

  3. Transfer the baking tray to the oven and bake for 8–10 minutes, or until golden and crisp. Remove from the oven and allow to cool.

  4. In a small bowl, whisk together the lemon juice, garlic, and a generous pinch of salt. Gradually whisk in the remaining 60 ml of olive oil until well combined.

  5. In a large salad bowl, combine the cucumbers, radishes, green onions, dill, and mint. Drizzle half of the dressing over the salad and toss with your hands to coat.

  6. Break the cooled lavash into bite-sized pieces and add them to the salad bowl along with the feta. Drizzle the remaining dressing over the salad and gently mix with your hands to combine.

  7. Season to taste with additional salt and Aleppo pepper, and serve immediately.
