IBS is a bit of a term that covers any persistent problem with your bowel. Its a long hard task to find out what the actual problem can be and often it may be just something that you eat every day that is causing your bowel to react. The two most common things are Wheat products and Dairy products. Start an exclusion diet. For 2 weeks cut out all Wheat/gluten from your diet. You will have to look at all the ingredients in prepared foods that you have bought in a shop. If no change then cut out all dairy products for 2 weeks, and re introduce wheat. If still no change try making a list of every single thing that you eat every day, including salt/sugar/spice/sweeteners. Then try cutting one thing out of your diet each 2 weeks. It can take time but it can help. Once you have identified the culprit then you have to leave it out of your diet.

You can also try the Fod Map diet. Try looking at this online...Fodmap NHS.

Forgot to say, yes, incontinence is quite normal as the gut contracts and tries to expel the offending food. Many IBS sufferers carry spare pants and wipes with them, in case they are caught out.
