Advice on plan for seriously addressing my IBS

I'm 39. I've actually gone to the Dr for this about 20 times. They've done a colonoscopy, an endoscopy, a sonogram, and blood tests. All came out good except my pancreas was getting close to warning levels on some parts of the blood test. I tried medication to slow down my digestion and clear out bad gut bacteria but neither worked.
Oh, I forgot to mention I was a pretty bad alcoholic for about seven years and I'm pretty sure that's what caused this. I also used to wear overly tight pants during the same time period.
I'm tired of farting 100 times a day and you know what, maybe I might want to be loved for once in my entire life. So I am very serious about doing something. I'm ready to read the damn medical books myself and go to Mexico for surgery.
I haven't had health insurance for years and I'm starting a new job which offers it but I'm thinking about not getting it because it didn't help before. Maybe I will use telehealth?
No combination of diet and fiber pills has ever worked. Maybe I have something like dumping syndrome where food moves too quickly through my stomach and small intestine. idk.
Would you please offer some advice about how I can come up with a game plan. No sense in suggesting I "talk to my Dr." That's why I'm here.

hi name, i know you are not called this but that's not the issue here! i think be a step ahead of your doctor's! do lots of research and don't give up badgering your doctor's about what is happening with your health. i kept badgering my doctors, swapped surgery and finally got told i never had ibs in the 1st place! i am coeliac, i do have allergies and i tried to get an apology out of them to no avail. not funny! i think you know your body, ask to either see a manager or a specialist. i don't know what country you live in but in England we have the NHS so for someone like me who live off very little we get help with our health. i wish you luck, there must be something your doctor's can do including medication to slow your bowel down? contact again.

Were you ever able to get your symptoms down to zero. Not sure if I'll ever fall in love when I'm farting all the time. Kind of depressing.

hi name, my symptoms never go down to zero, as i get stressed out constantly! i think you could find love people should the person within! ask for medication to slow your bowel down! insist you have something to help you and say you have really had enough of the PHYSICAL symptoms otherwise you'll just be given antibiotics!

I'm sure there are things they can cure but it's so frustrating when they don't have any clue and dismiss you. I'm considering getting a text book but I don't know chemistry or biology but I'd be willing to learn them. So frustrating when you spend so much time and money and then you get 5 minutes with the Dr and they don't have any idea what the problem is.
Anyways I tried activated charcoal yesterday and so far is really working. I've tried it before but for whatever reason I don't remember it working as good as it is now. But I want to know what the actual problem is.
