Brain fog / light-headed / spaced out feeling for 6+ months

Back in December 2020 I had some kind of virus that kept me in bed for a couple of weeks. Since that time I have had constant debilitating brain fog which has slowly but surely been ruining my life, making daily activities impossible. Blood tests have confirmed that the virus wasn't Covid or EBV. I feel in a constant state of being spaced out or hungover, my head feels very 'full' all of the time.

I have had multiple blood tests over this 6 month period. Early tests showed Vitamin D deficiency, for which I have been taking high strength supplements but so far have made no difference. Tests also consistently show raised liver ALT, but an ultrasound of the liver came back normal. There was also a mildly raised level of testosterone.

Initially my GP thought it my be sinus-related or eustachian tube dysfunction. I was prescribed steroid nasal spray but this did not help. A private ENT then ruled out eustachian tube dysfunction and any other ear issues.

Next I saw a neurologist who thinks it may be migrane-related, exacerbated by a recent major lifestyle change. In October 2020 I quit my job as a chef to start a physics PhD, so I now sit infront of a screen all day instead of spending 16 hours on my feet. He prescribed Amitriptyline, which I have been taking for 8 weeks, starting at 10mg and increasing (now up to 30mg). No difference is noticeable thus far.

I have also had a brain MRI, chest X-ray, and EKG, which all came back normal. Blood tests have ruled out other serious issues (hepatitis B/C, HIV, B12 deficiency, diabetes, STIs).
