Chance of testing Positive for Covid after 3rd dose of Pfizer vaccine

We are a couple in our mid-70's planning an 18 day trip to Croatia in late Sept/early Oct. We will receive a 3rd dose of the Pfizer vaccine 3 weeks (arranged by our physician) before we depart. We understand there is a very small chance of becoming seriously ill with Covid and are willing to take that chance However, we are concerned about testing positive and having to quarantine in a hotel room prior to our return to the U.S.

We are debating whether we should cancel or proceed with the trip. In making a decision it would be very helpful to know what the chances of testing positive are. 50%, 25%, 10%, 5% or less? I realize there has been no peer reviewed research on this topic, but would welcome opinions from knowledgeable physicians or scientists.

We will take normal precautions...nothing extreme in either direction. We will try to avoid crowded indoor places but this will not always be possible. (airports, planes, boats)
