Courgette soup

I've been away for a week and my house sitters failed to pick any courgettes! I dug out my favourite courgette soup recipe and it occurred to me that it's very low fat  I'm posting it for anyone else who has a glut.

Fry one large chopped onion in 6 sprays of Fry Light until soft. Thinly peel about 500g of courgettes (each one of mine weighed that) and scoop out the seeds. Chop it and add it to the pan with 1 and a half pints chicken stock made with one chicken stock cube. Bring to the boil and simmer for half an hour, cool slightly and blend it. It makes about 1 and a half pints. If you have that for 2 meals, that's 109 calories and 1.4g fat per helping. Obviously if you make it do 3 meals it's even less. It freezes well, and doesn't taste strongly of courgette.

    Hi Sally, I also  had a backlog of courgettes . I have been using them in salads and also stir fry. Your soup sounded a good idea hence morning in kitchen !! So easy to make and really tasty. I added a little cider  (really low in calories - 38 per 100 ml) to mine. Absolutely delicious . Thanks for sharing.
