Diabetes Symptoms - No Diabetes. What could It be? Somebody Help!

Below is a list of my symptoms. The symptoms were suddenly onset onto me. I just woke up one day feeling this way. I've been experiencing these symptoms for the past 9 weeks now. Worth mentioning, when I start taking Prilosec my symptoms diminish drastically, almost lead a normal life. If I cut them off, they start to creep back up after a 3 to 4 days.
- Fatigue
- Nausea
- Headache
- 2 times and only 2 times, I've experienced significant fatigue 1-2 hours after eating.
- Intolerance towards fatty foods (get abdominal pain and/or bloating and/or nausea)
- Dry mouth (especially after waking up) no matter how much water I drink (50-70 oz/day)
- Dry eyes
- light-headed after exercising
- Bad breath (metallic-like, difficult to ascertain)
- Abdominal pain
- Blurry vision after exercising
- Frequent urination (especially in the morning 7am-1pm)
- New and increased floaters in eyes during this period.
- I've had (4) blood tests done over the past 9 weeks, with the latest done 1 week ago (01/08/2021).
- All 4 tests show glucose normal (80-90) while fasting.
- A1C values in all 4 tests show normal values (4.9).
- I also had a glucose tolerance test done last week and it too was normal.
- Urinalysis show no signs of infection, although, there were traces of ketones in my sample (not fasting). Home test strips for ketones always show a trace, sometimes higher concentrations of ketones. My family members always show a negative result for these test strips.
- I've had ultrasound done to check for gallstones and other abdominal abnormalities (pancreas, liver, etc.) It too was fine.
- AST and ALT values (liver tests) have been ever decreasing at a noticeable rate since my first test back in early November. Though the values are not considered low.
Primary care doctor: Ordered 1st blood tests. Does not know what could be wrong with me, referred me to an endocrinologist. Believes the ketones in my urine are not normal. He says there are multiple diseases and conditions that can mimic diabetes.
Endocrinologist: Ordered latest blood tests. She does not think there is anything wrong with my endocrine system (no diabetes). I mentioned ketoacidosis (which coincides with many of my symptoms) but she shrugged it off and said there was no sign of acid buildup in my blood tests. She also says that having ketones in the urine is fine, even if these are in higher concentrations (don't know about this). Referred me to see a gastroenterologist, says some of the symptoms could be related to a gastric system problems. Recommended an endoscopy.
Gastroenterologist: Does not believe my symptoms are really correlated to a gastric problem. She finds my symptoms "odd". Doesn't believe I need an endoscopy but left the choice up to me.
I will pursue an endoscopy. I'm reaching out through here to see if anybody has had a similar condition. Has anybody out there had something similar happen to them? I am just completely lost here and it appears so are the doctors I've seen. Just anything that can point me to the right direction or to an individual that could help. I'm very concerned as I don't want this to lead to other complications and I'd like to be off Prilosec. Thank you all so much.

Have you had your Thyroid function tested?
