Diagnosed Chronic Gastritis / Gas Problem / Unknown Cause

Hello,
Problems started with muscle pain after doing some crunches on the 1st of March. I forced the muscles few days in a row with bad form and ended up with bad muscle pain there.
I ended up going to the doctor, getting checked and nothing was really wrong, I just felt pain and eventually it subsided.
Whilst the pain was subsiding I started feeling uncontrollable bloating and gas formation which gave me quite a few sleepness nights and a lot of discomfort during the day. One problem somehow led to the other, and no matter how many bowel movements I gave, the gas was constantly being created inside my stomach.
I took some medication and this ended up getting better but eventually my bowel movements weren't as easy. Although the gas wasn't as harsh when I took some prescribed medication to stop its creation I felt normal during the day. After stopping it came back.
With all the possible tests done I had to resort to the invasive ones, colonoscopy and upper endoscopy. There finding out I have as they say a mild Chronic Gastritis of the Antrum but not because of H Pylori. My doctor told me that she could give me relief but that there wasn't a proper treatment she could give me.
I have been going on for weeks since before the exams, where I have gas that fills my stomach and a lot more difficulty passing gas along with faeces. I have had a healthy plant based diet for many years and after the exams I started eating basically only anti-inflammatory food and avoiding all the bad stuff that could make it worse for my stomach.
I have no pain and I have no other symptom besides what I just described. The main thing that bothers me so much that I can't focus is that I feel like the air cannot leave my stomach downwards because when it does it makes a noise and I feel a sense of relief, later having it on my large intestine and sometimes getting stuck there too on the left side. It happens especially after eating a meal, even if small but generally throughout the day, even if it somehow goes down, it always creates more.
I used to have very regular bowel movements because the food I eat would go down quickly, so maybe twice a day but now I find myself in the toilet many times trying to get something out and no gas nor faeces come out for a long time.
What could be causing it? I heard stress might play a role and I have been severely stressed and dare I say depressed the last few months. I am physically inactive especially after this problem arose. On the other hand, I don't drink, don't smoke, don't take medication for anything else and I'm in my early 20s.
My only clue is the the stuck gas in the stomach, difficulty passing it through the large intestine, also difficulty burping (sometimes when I manage to burp, the gas also finally leaves the stomach), stress and the muscle injury I developed early march.
My doctor prescribed me Omeprazole and Sucralfate and both have terrible ratings and reviews which worries me a little because they treat symptoms I am not showing such as pain, heartburn and acid reflux.
