Ear and Throat Problems, can't figure out what's wrong

About a month or two ago I started getting painful ears, went to the doctor and got antibiotics and ear drops. Two weeks later the pain was mild but still present so I went back and was given the same things. The pain persisted and I was given different antibiotics and ear drops. I had a wisdom tooth removed around this time which seems to be healing fine with no pain, not sure if relevant. But suddenly the pain got so much worse and moved to the back of my mouth, top of my throat, aswell and now whenever I swallow it hurts all the way to my ears. Some days it's only one side or sometimes both by the doctor said my ears seemed to be cleared up even when I was in pain. I went back yesterday and he said they look red and blotchy again, he gave me antibiotics but said they don't seem to be helping and referred me to a specialist which I can't see for another 2 months. What could be wrong with me? It became so much worse when I got a cold a few days ago, this morning the pain in my left ear while swallowing was almost unbearable

That's a lot to digest, and there are many possibilities.
It would be helpful to know what oral antibiotics you took, and the name of the ear drops (both rounds). In general, antibiotic ear drops should be used no longer than 4-7 days. Longer use promotes growth of fungus in the ear canal(s). Most general docs don't know about that, and many patients wrongly assume they are to use the whole bottle.
It is possible that you never had an ear infection. Only about half of patients whose chief complaint is ear pain have ear disease. If the pain was or is intermittent, that makes it less likely to be of ear origin. There are many diseases other than ear disease that can cause ear pain, some minor and some serious. And yes, dental problems account for a lot of such cases.
If you want to increase the possibility of a definitive answer to your problem, and very likely a more meaningful evaluation that may lead to resolution of the problem, I suggest you see a reputable ENT physician. General doctors are notoriously wrong more than 50% of the time in their assessment of ears, and especially ear pain, largely because they have never been taught to use a binocular microscope or to instrument ears. Nor have they been taught much more about ears than when you see red, you give antibiotics.
It sounds as if you are in a "managed care" type of insurance program, one that strives to keep you away from specialists as long as possible. That is not a plan that I would EVER sign up for, although if the government has thrust it onto you, you may have no recourse. What country are you in? If possible, get thee to an ENT physician. Find one who is not booked up for two months. Oral antibiotics are not harmless! As with any medical problem, what you need first is an accurate diagnosis.
On an almost daily basis I see patients in my office for ear pain that has been treated as infection with no success. The great majority do not have ear disease and never did.

I'm from Australia and the only ENT I could get into in the next few months is in September. The pain is entirely in my throat today, no ear pain at all. Hoping he pain lessens in that time. I've been taking amoxycillan, not sure about the ear drops names but I only used them for 4-5 days at a time over 6 weeks, I do know one was an anti fungal infection one though

You need a referral from your GP which I only managed to get last week, that's when the swallowing pain started and my doctor said he'd done all he could do pretty much and didn't know why I'd been having pain and didn't know why it was getting worse. I'm 23

If you are talking normally, swallowing your food without difficulty, and breathing normally, that would make it very unlikely that do you have anything serious going on in your throat. You indicate that the pain varies from day to day, which makes it even less likely. Can you tell me the condition of your teeth, and whether the pain tends to be on one side more than the other.

My throats has been better though the left side of the roof of my mouth is a bit swollen today. I have a wisdom tooth on that side that isn't painful itself, but I was having pain on the left and right side in my ears before I removed my right wisdom tooth, it could be a coincidence that the pain is on the left where my only wisdom tooth is remaining and the right side seems to have lessened. I am considering having it removed also even though it isn't painful to see if there is any difference.
