SAUSAGES!!! I love sausage, egg, chips and beans and can never get the sausages, even though they are freely available in shops. They're delicious. (Although, that's more for a cafe than a coffee shop I guess). For a coffee shop, it's easy to buy sliced GF bread, freeze it and then offer toasted sandwiches which can be toasted straight from the freezer - probable better to buy a special toaster - but it also means you could offer toast with an English breakfast, or egg on toast, or beans. GF Soup - (dead easy to make, Knorr Stockpot makes a good stock base), with a GF roll. You can also offer GF scones in the afternoon - easy to buy in Tesco. They freeze well and can go into an oven or microwave for a few minutes to become delicious. Serve with jam and cream. All GF cakes freeze well. I miss a good Victoria sponge, I must admit. I make a nice one using Tesco GF sponge mix, but I substitute the olive oil in the recipe for best butter, then put jam and fresh cream in it. I slice and freeze it, then take it to birthday parties. Might be useful for you. Lastly, I cook GF apple crumble (with Doves Farm flour in the crumble) and freeze portions of it. It microwaves fine. Jacket potatoes are good too. Make any chilli with corn flour to thicken. GOOD LUCK - I wish there were more people who think like you!

Don't forget, once you're up and running, to let Coeliac UK know about you. They do a big PR campaign every May and you can find yourself featured in the local press, giving you very good publicity.

Can I also suggest you advertise on your window that you serve gluten free food as it will attract people walking past ?

if you contact Coeliac Org UK via their website they will also give you lots of information - especially in respect of avoiding cross-contamination with gluten containing products - which is a very important part of catering for gluten free in cafes and restaurants....they have a special information sheet if you request it.
