Good Morning

I have finally found some Silken Tofu at my Marks and Spencer's,  and i also have got some Manuka Honey, buy one get one half price, from Holland and Barretts,

    What is the Silken Tofu for Margeret .Hope you a feeling a bit better and hopefully sleeping more Carol

      Hi Carole, i use for smoothies its rather nice mixed with fruit, and is low in fat. I have had 2 good nights, apart from Sunday i went out for a meal with friends and must have eaten something as my uricaria flared up, neck and throar looked like beetroot, but did sleep, also i had a glass of wine which is something i dont do normally drives my hubby mad.

      Your hubby sounds a hard task master , a little of what you fancy or not ,is good for everyone's moral.I will look out for silken tofu ,havnt had tofu before .I am afraid I do not like milk partly because it doesn't like me very much . Does the silken tofu taste milky only would like to try smoothys but don't know what to add to fruit to make it the right consistency .Carol.

      Hi Carole, just read what i posted and what i should have put at the end was i drive my hubby mad because i wont have a drink, as he says it would relax me, i am still trying to get him to understand  what we have to put up with though.

      I cant say its like milk, its a soft block and comes in a carton, i use it like i would cream, but find it can be bland if you dont mix it with something, i dont know if anybody else does this, i would like to hear from them to see how they use it.

      I have a friend who cant tolorate milk, and she uses soya yougurts for her smothies, could you try that., and also have you tried almond or rice milk i also put in a banana to thicken mine.

    I might just have to try making a silken tofu smoothie!

    As I'm vegetarian anyway, tofu is part of my diet, but usually only in stir fries.

      Hi Susanne, no i dont add anything else, i put in soft fruit like, blueberries, blackberries, and a banana and then silken tofu, sometimes i use frozen fruit, how do you do yours?

      I haven't actually made any silken tofu smoothies yet. I've only used tofu in meals such as stir fries, obviously not the silken variety.

    Glad you found a source for the silken tofu. My wife uses it in a delicious whole wheat /raisin muffin.

      that sounds nice, would your wife share her receipe? i am always on the look out for different ways to use silken tofu,

    Hi Margaret,

    Hope you had a good nights sleep

    Below is the muffin recipe using silken tofu.

    Tofu Whole Wheat Raisin or Blueberry Muffins               12 muffins

    Grease muffin pan; preheat oven 425* degrees F (US);

     

    Blend Together:

                1 C Whole Wheat Flour

                1 C Rolled Oats

                2 tablespoons milled Flax Seed

                4 tablespoons All Bran (cereal)

                2 teaspoons baking powder

                ¼ teaspoon baking soda

                ½ teaspoon salt

    1 teaspoon cinnamon or to taste

     

    Add 1 C raisins or blueberries to dry mix to coat fruit

     

    Blend in Cuisinart or equivalent (blend till tofu is mixed well)

                120 ml “All Whites” (or 3-4 egg whites)  (1/2 cup)

                50   ml canola oil  (1/4 cup)

                120 ml honey  (1/2  cup)

                240 ml silken tofu  (8 oz)

                Vanilla to taste  (1-2 teaspoons)

     

    Mix both together to moisten

     

     

    Bake 12 – 15 minutes (bake as one would any type of muffins, check with cake tester)   a toothpick.

     Our Silken Tofu comes in a 16 oz. container so Karen makes two batches.
