How long to return to a normal diet after raised liver transaminase due to a viral infection?

My blood tests recently came back with very high transaminase results (level of 500, normal level is 8-40), as well as finding a mild case of mononucleosis. I've been put on medication for the liver issue (which contains milk thistle), as well as a very bland diet to try and sort the liver enzymes out. My question is how long does it typically take for the transaminase levels to return to normal, and when can you start eating as usual again? 

I'm not a heavy drinker, and generally lead a healthy, active lifestyle.

    There are a lot of cases of elevated ALT/AST with mono (with 500 nowhere near the most extreme) if you Google the issue and it seems that some people’s fall to normal within a months while some can have significant elevation for many months after. But there are no reports of mono actually causing cirrhosis or liver failure, so your liver can cope with it. Just avoid drugs which are bad for the liver (such as paracetamol) and drinking. That will speed up the recovery process.
