I have been having weird symptoms for months, I need help!

Hello! I haven't been myself since last August and I am desperate. I am going to put all my symptoms here in hopes that someone has experienced something like this and has advice.
I have been having lots of stomach and GI issues since August. My symptoms are nausea, loose stools, excessive bowl movements, fatigue, lack of appetite, slight chest pain, lightheadedness, brain fog, headaches, and fatigue. I have been dealing with this for a long time and was able to manage it up until January. In January I ate sushi and immediately had a reaction, so to say. My mouth started tingling under my tongue and near my uvula. I thought my throat was closing. I took Benadryl and was fine in an hour or so. After that one instance, I have been having the same exact sensation in my throat ever since, and it is happening all the time, especially after I eat anything at all. My other symptoms have also gotten progressive worse as well. I have had a colonoscopy, endoscopy, stomach emptying test, thyroid test, EEG, MRI, and Covid tests and it has all came back normal. I have been put on Omeprazol(40mg), Laxatives, Bently(10mg) and Notriptyline. None of which have worked. I am at a loss. I want to feel better and get back to my normal life. Please help me

I don't have the exact same problem, but I do have a closing sensation in my throat very often. It usually seems to get worse after I eat or on a night time, and I find that I get relief from burping. I also get moments where I feel faint which are triggered when I have extreme heartburn (feels like my chest is on fire and very tender to touch) and have very little appetite to the point where I mostly only eat one meal a day. I am also on Omeprazol (40mg) and take beta blockers for anxiety, neither seem to be working apart from a slight improvement in my breathing which was extremely bad. I really hope there is a cure for this someday soon, it's so miserable and no way to live. For the moment I am mainly trying a dairy free, gluten free diet and making my own soups with different veg and plant based milks... hopefully this helps some of the problems but I suppose we just have to trial things until we find something that works best for us.
