I wake up every morning between 6:30am and 7:00am to poop. Regardless of what time I sleep.

For a long time I've been waking up every morning at around 6:30am to poop. I thought it was because I drank alcohol of a night every night, but I've since quit drinking all together (1 week in) and it's still happening.

My poops are normal. But when I wake up I'll have an uncomfortable feeling in my stomach. Sometimes a little nausea. Once I poop the uncomfortable feeling disappears, but I can't got back to sleep. I'm someone who can't go back to sleep once I'm awake.

Last night I decided to go to sleep at 3:30am to see what would happen. I wasn't feeling sleepy anyway. I've had insomnia since quitting alcohol. Today I woke up at 7:10am to poop sad

I eat breakfast, lunch and dinner. I'll usually stop eating around 7pm but I may have a little bit of chocolate or a snack if I feel peckish.

Why are my bowels so regular like this?

Lucky you, IMHO.  Constipation and irregularity are a problem in opposite direction for many

At times I wish I had it the opposite way because it causes me to sleep less. Maybe I just need to sleep earlier. Will try this tonight but I hope I do not wake up at 4am to poop instead!
