INDULGE..MAKE YOUR OWN HEALTHY MARZIPAN..YUMMO

Such a yummy recipe..I mean, who doesn't like marzipan....maybe it's you..sorry..I make this as a fillings for homemaker dairy, and sugar free chocolates., made from cacao and coconut oil..do enjoy..many of us didn't indulge over Easter so these are healthy....in moderation of course...:-) xxxrazz

Ingredients:

1¼ cup honey

4 cups blanched almond flour

2 egg whites

Fill your sink or a large bowl or saucepan with cold water (maybe throw in a few ice cubes).

Pour honey into a medium saucepan with a sweet thermometer attached to the side.

Heat honey over low heat (or medium-low) until the honey reaches 240F (this should take a long time, something like 10 minutes, with no need to stir while the honey is heating).  Honestly it's worth it!!!

Remove pan from heat (but leave the element on the stove on, and turn up to medium-low if you had it on low) and remove the thermometer from the pan,,, Place the bottom of the pan in the prepared cold water.  Stir the honey until it is thick and creamy (this will take 3-4 minutes and will feel like an eternity for your arm)....

Stir in almond flour and egg white.  Place back on the heat and stir constantly for 2-3 minutes, until thick..remember to get help from someone if you can't stir this long..this is excersing with YUMMO results..lol

Pour into the bowl of a standing mixer with paddle attachment.  Set mixer to low and allow to mix until cooled to room temperature (this will probably take 20-30 minutes). Sooo worth the bother !!!  Alternatively, you could pour out onto a clean surface (counter or baking sheet, maybe lined with parchment paper since this stuff is pretty sticky) and turn/kneed with a pastry scraper until cool.

Place in a sealed container and refrigerate overnight to set.  Enjoy!

      Your spot on there Bee, that is the only thing I can still do on my own..I just love it when people who have my cooking say..mm that's nice..a bit narcissistic I know.,.but that's what floats my boat...hooe you mske it..you will really enjoy it..I once though marzipan was only fir wespdding cakes...how wrong was I ...I used to love eating that little marzipan fruit you can buy.,then when I went Paleo I found this awesome recipe..,yum....it's 8.25.am here and we are taking our grandson out, as we usually do Wednesdsys..he's only 2n1/2..- a really good boy, but it's the school holidays here and I don't want to be invaded by hundreds of little kids, as much as I love em...gee that's sounds old!!! so we will go somewhere different today...have a lovely day Bee..be blessed..:-) xxxrazz

      I have never been too keen on marzipan but I suppose as one gets older taste buds do change so will give it a try soon.

      It's definitely a acquired  taste..some just hate it..I love it..we had a lovely day with Noah...it's great as it gets me out and about too and of course tires him out...lol..have a great day Bee..be blessed..:-) xx
