Need some reassurance, please help.. should I be worried?

I usually chew my food very well into mush, but sometimes my throat will force me to swallow whenever I try to make sure the food is good enough to swallow which will sometimes cause me to have a scratchy throat when swallowing food and I will cough after from it and start to panic, but does anyone go through the same throat issues where food will feel like it's caught in the throat sometimes, even though mostly nothing will be there? I have a fear of choking one day on my food since I have this sensation mostly all the time and it worries me, especially when I take forever to eat to avoid that from happening and I would get a scratchy throat sometimes. It's so frustrating, I just started taking meds for it, but I know it will take awhile to heal my throat, but wondering if anyone can relate and how to cope with it? I also suffer from health anxiety too, so it's really hard to convince myself that it's just my GERD symptom. I can swallow liquids down and not choke and also talk normally, feels like the food is caught in the middle of my throat and I'm very anxious right now on whether to get some help or that I will be okay. I'm only feeling the sensation and worried on choking.

    are u using any medicine for panic? u are hyper attending your throat ! for desensitizing it use some medication like clonazapam or any benzo which stops panic so that u can eat peacefully!

      No, I'm not on any medication right now, I should be seeing a therapist soon for some help, I'm still pretty anxious right now, even though nothing really bad happened to me yet. I can still talk, just wish the sensation would go away.
