    Hi Nori,

Inflamation is a nasty culprit that plagues many of us with Celiac.  You may or may not have Celiac Disease but since so many symptoms are the same we might as well treat your symptoms as if you do.  Look out for tea - why?  Consider the bag itself.  Is it manufactured in a GF manufacturing firm? How about the paper tab? The box? Caffeine is know to initiate the autoimmune disease in some of us - use caution on this one too. Review the FODMAP diet and begin an elimination test of items you find there that you regularly eat - apples being one of them. High fructose is another potential irritant. Here are a few things to take positive steps towards feeliing better:

    1. Lactade before eating anything questionable has helped me (except for gluten)

    2. Freedavite is a great multi-vitamine and mineral suppliment

    3. Align is a great probiotic suppliment

    4. Radiance CO Q-10

    5. Use caution on your vitamine D

    6. Try to find items NON-SOY - soy can also be a challenge

    All the best to you!

      Hi Ellen,

I might have a few tips. It takes about 18 - 24 months to BEGIN to settle into a diet.  Unfortunately, foods change and you have to be diligent in checking on foods if you should get sick.  You simply have to have a journal - I hate it, but it has been my saving grace. Write what you eat and how you feel - DAILY. You will have something to go back on later - and when you are sick, you really can’t remember how you felt the last time - so you think you are dying again!!!  I have Lundberg Brown Rice Organic Rice Cakes (2) with my own peanut butter and sliced bananas.  That’s breakfast.  About 3 hours later I take two Lactaid and a Chobani SIMPLY 100 yogurt. I live on chicken.  My wife has learned to make numerous recipes. I also live on fish. I know salmon is good for me but it is kind of difficult for me.  I enjoy Ancient Harvest GF products such as Ancient Harvest Spaghetti. Cook ground turkey and mix Rao’s Sensitive Formula Marinara sause - it is safe and wonderful but you might have to purchase by the case online.  So lunch is leftovers and dinner is ... well, dinner!  I can drink wine and I absolutely enjoy it.  Our diet is limited - that’s just a fact.  There are a number of ways to cook chicken and turkey burgers or ground turkey to enjoy a variety of sorts ... I do take Align, a probiotic.  I hope this helps!

      Bundles of hugs,

      Laurie
