Welcome to the world of boom and bust. I suffered this for years until I started to listen to my GP who kept telling me how to fix it and the answer is very simple. When you feel good, limit how much you do. You are doing too much so the body needs time to recover, hence the boom and bust cycle. Simply control your enthusiasm to do too much on the good days and once you learn the formula you will have more good days than bad.
I describe it as learning to run a marathon you don't run 26 miles straight off. First you do a mile, then 3 etc and work up to it. With CF its the same. Using this approach its taken me almost 3 years but I can now cycle 50 miles.
Best of luck
