Recurring sore throat

Does anyone else have this issue? Diagnosed over 2 months ago after initially having a sore throat lasted about 10/11 days. Although I suspect now I've had EBV for over a year. The sore throat got better and then would come and go a day here or there for the next couple weeks. The past 2 weeks I've finally been feeling a little more energy so have done stuff. Friday I had a busy day and then Saturday I woke up with a sore throat again and feeling so tired and sore. Today, Saturday throat still hurts and I have head pressure. It's this constant feeling like I'm getting a cold but it never progresses further. I haven't dealt with this as long as other but I'm already getting depressed at this feeling defeated feeling. Has anyone else experienced this? Is is normal? My doc just thinks I have anxiety and probably thinks I'm a hypochondriac. I wish I knew how to explain to him how I felt and have him believe it's real symptoms.

I was thinking about making an appointment to an ENT. I started having some issues since September of 2018 that's why I think I may have had this longer than when diagnosed. I am going to have the doc run a blood panel. In April of 2019 I had an endoscopy and all looked good in my esophagus they said then but I know things can change. This is getting really annoying and bringing me down. I just want to feel well again and do all I used to be able to do.
