Sore/dry "cobble-stoning" throat for two months. Anyone with similar experiences?

I have had a sore/dry throat for about 2 months now with few other symptoms. No fever, cough, runny nose etc... I do however have thick or excessive mucus production in the back of my throat. It has not improved or worsened over time.

I saw a doctor virtually a few weeks ago and she noticed that my tonsils had tiny holes in them which she referred to as "cobble-stoning" likely caused by the mucus build up. She prescribed me Amoxicillin which did nothing to help.

I've now been prescribed by my ENT Amoxicillin-Clavulanate which has not improved anything over the first 5 days of taking it.

Has anyone experienced something similar or have any tips?
