That's an unusual question from a CAM boot wearer.
Frankly I wouldn't conceive of taking in the stress and wildly gyrating movements of amusement rides with a recently broken ankle, but that is just me. I would just wait a few months until I was jolly good and more fit.
I doubt the park management would stop you from partaking in their rides, since you are not crippled and are mobile enough in a boot (assuming your doc said you could go weight bearing in boot) in case they needed riders to exit quickly in case of any problems.
