These grilled sardines with lemon and herbs are a celebratory take on fresh, sustainable seafood. By briefly brining the fish in sea salt before hitting the heat, the flesh stays firm and succulent, providing a perfect base for the zesty gremolata-style topping. The combination of bright citrus, fresh coriander and salty brine-cured olives cuts through the natural richness of the oily fish, creating a vibrant Mediterranean flavour profile that feels both sophisticated and simple.
As a heart-healthy dish, this recipe is packed with essential omega-3 fatty acids and minerals, making it an excellent choice for a light lunch or a nutritious starter. Serve these sardines hot from the grill with a crisp green salad and some crusty sourdough to soak up the herb-infused oils. It is a wonderful way to enjoy seasonal seafood at its most flavourful and nourishing.

Place sardines in 11 x 7 x 2-inch glass baking dish. Sprinkle fish with 1 teaspoon coarse salt. Cover and refrigerate 30 minutes.
