This vibrant grilled lobster with chilli-lime butter is a sophisticated choice for those seeking a high-protein meal with a touch of luxury. By combining the natural sweetness of fresh lobster with a punchy, zesty butter, this recipe brings a gourmet edge to traditional outdoor cooking. The subtle heat from the chilli powder perfectly complements the citrus notes, creating a balanced flavour profile that enhances the delicate seafood without overpowering it.
Ideal for a celebratory summer lunch or a special weekend supper, this dish is surprisingly simple to prepare on a standard barbecue. Splitting the lobster allows the smoky flavours of the grill to penetrate the meat, while the seasoned butter keeps everything succulent. Serve these charred tails and claws alongside a crisp green salad or grilled seasonal asparagus for a light, nutritious, and undeniably impressive feast.

Ingredients for Dr. BBQ's Lobster with Chilli-Lime Butter
Chilli-Lime Butter
240ml (230g) butter
Juice of 2 limes
2 tablespoons good-quality chilli powder
Salt, as needed
Black pepper, as needed
2 whole live Maine lobsters, about 675g each
Your favourite barbecue rub, as needed
How to make Dr. BBQ's Lobster with Chilli-Lime Butter
Prepare the grill for cooking over direct medium heat. In a small saucepan, melt the butter and blend in the lime juice, chilli powder, and salt and pepper to taste. Set aside.
Split the lobsters completely in half down the back with a chef's knife. Remove the tails and claws. Discard the rest. Crack the shells on the claws and inject or drizzle them each with 1 tablespoon of the butter. Season the tails lightly with the rub. Grill the tails and claws for about 5 minutes on each side. Spoon some of the Chilli-Lime Butter into the tail shells. Cook until the lobster is just barely done, another 4 to 5 minutes. This will vary depending on your grill. Serve the remaining Chilli-Lime Butter for dipping.
