This vibrant guacamole with fresh corn and chipotle offers a sophisticated twist on the classic Mexican dip. By incorporating charred or raw sweetcorn kernels, you add a delightful crunch and natural sweetness that perfectly balances the rich, buttery texture of the avocados. The addition of smoky chipotle chillies brings a gentle heat and depth of flavour, making this a standout vegetarian option for any gathering.
Perfect as a healthy snack or a versatile side dish, this recipe fits seamlessly into a weekend spread or a midweek taco night. The inclusion of soured cream ensures a luxurious, velvety finish while keeping the spice in check. Serve it alongside crunchy tortilla chips or as a topping for grilled vegetables to enjoy a nutritious, homemade treat that is far superior to shop-bought alternatives.
