Crab Salad Tostadas

These vibrant crab salad tostadas offer a fresh and sophisticated twist on a classic Mexican-inspired favourite. By pairing sweet jumbo lump crab meat with zingy lime juice, fresh mint, and crunchy celery, this recipe creates a beautiful balance of textures and bright, zesty flavours. The addition of yellow cherry tomatoes provides a lovely sweetness that complements the heat of the jalapeño and the savoury notes of the Old Bay seasoning.

As a diabetes-friendly option, this dish is naturally nutritious and low in sugar, focusing on high-quality protein and healthy fats from the creamy avocado layer. It is a wonderful choice for a light weekend lunch or a quick, impressive dinner that feels indulgent without being heavy. Serve these crispy shells immediately with extra lime wedges to keep the seafood tasting its best.
