Grilled Chicken and Peach Salad

This vibrant grilled chicken and peach salad offers a sophisticated blend of smoky, sweet, and peppery flavours. Combining succulent grilled chicken breasts with caramelised peaches and fresh baby rocket, it is an ideal choice for a light summer lunch or a refreshing evening meal. The natural sweetness of the fruit pairs beautifully with the charred notes from the grill, while the whole-grain mustard dressing add a sharp, savoury finish that ties the dish together perfectly.

As a diabetes-friendly option, this recipe focuses on lean protein and fibre-rich greens, making it a nutritious and heart-healthy choice for the whole family. The use of white balsamic vinegar provides a delicate tang without being overpowering. Serve this salad slightly warm for the best experience, perhaps with a side of toasted wholemeal sourdough for a more substantial, well-balanced plate.
