These mint and cumin-spiced lamb chops are a vibrant, aromatic take on a classic grilled favourite. By using an abundance of fresh coriander, parsley, and mint alongside traditional Middle Eastern spices like ras-el-hanout and allspice, the meat is infused with a deep, savoury flavour that perfectly complements the natural richness of the lamb. The herb-heavy marinade creates a beautiful crust when seared, ensuring every bite is packed with fragrance.
As a diabetes-friendly main course, this dish focuses on high-quality protein and fresh aromatics rather than sugary glazes or heavy sauces. It is an excellent choice for a healthy weekend lunch or a summer barbecue, especially when served alongside a crisp green salad or roasted Mediterranean vegetables. For the best results, allow the lamb to marinate overnight to let the spices truly penetrate the meat.
