Oven-Roasted Dungeness Crab

This oven-roasted Dungeness crab is a vibrant and aromatic seafood dish that makes a spectacular centrepiece for any special dinner. By roasting the crab in a fragrant blend of garlic, shallots, and chilli, the sweet meat absorbs a wonderful depth of flavour while the shells take on a beautiful toasted colour. The addition of fresh thyme and parsley provides an earthy balance, making it a sophisticated yet simple way to enjoy high-quality shellfish.

As a diabetes-friendly recipe, this dish focuses on healthy fats from olive oil and the natural brightness of blood orange juice rather than heavy creams or sugars. It is naturally low in carbohydrates and high in lean protein, making it an excellent choice for a nutritious, light lunch or dinner. Serve it with a crisp green salad or steamed seasonal vegetables for a complete, heart-healthy meal.

  • 60ml olive oil

  • 2 tablespoons minced garlic

  • 1 tablespoon minced shallot

  • 1 1/2 teaspoons dried crushed red pepper

How to make Oven-Roasted Dungeness Crab

Preheat oven to 260°C. Melt butter with oil in heavy large ovenproof skillet over medium-high heat. Stir in garlic, shallot, and dried crushed red pepper. Add crabs; sprinkle with salt and pepper. Sprinkle 1 tablespoon chopped thyme and 1 tablespoon chopped parsley over crabs. Stir to combine. Place skillet in oven and roast crabs until heated through, stirring once, about 12 minutes.

Using tongs, transfer crabs to platter. Add orange juice and peel to same skillet; boil until sauce is reduced by about half, about 5 minutes. Spoon sauce over crabs. Sprinkle with remaining 1 tablespoon thyme and 1 tablespoon parsley and serve.
