Country Pâté with Mango and Pineapple Chutney

This sophisticated country pâté with mango and pineapple chutney offers a refined balance of rich, savoury meat and vibrant, acidic fruit. The homemade chutney, infused with star anise and a hint of chilli warmth, provides a contemporary twist on the classic ploughman’s accompaniment. By caramelising the sugar before adding the vinegar and tropical fruits, you create a deep, complex syrup that cuts beautifully through the density of the pâté.

As a high-protein starter or part of a weekend sharing board, this dish is impressively simple to assemble using high-quality shop-bought pâté. Preparing the chutney at least four hours in advance is essential for the best flavour, making it an excellent choice for stress-free entertaining. Serve with generous slices of crusty baguette for a satisfying contrast of textures.

How to make Country Pâté with Mango and Pineapple Chutney

Bring sugar and water to a boil with star anise in a small heavy saucepan over medium heat, stirring until sugar has dissolved, then wash down any sugar crystals from side of pan with a pastry brush dipped in cold water. Boil, without stirring, swirling pan occasionally so caramel colours evenly, until pale golden. Carefully add vinegar, red-pepper flakes, and 1/8 teaspoons salt (caramel will spatter and harden). Continue to cook until sugar has dissolved. Remove from heat and cool 10 minutes.

Pour syrup over fruit in a bowl and gently stir. Chill at least 4 hours.

Bring chutney to room temperature before serving with pâté
