This grilled lemon-garlic chicken is a vibrant, high-protein dish that makes the most of the smoky flavours of the barbecue. By combining succulent chicken thighs with sweet leeks, red peppers and baby new potatoes, you create a complete, balanced meal that is as nutritious as it is delicious. The zesty marinade of fresh lemon, garlic and smoked paprika infuses the ingredients with a bright, Mediterranean-inspired profile that is perfect for summer dining.
Ideal for those seeking a healthy and satisfying dinner, this recipe uses a grill basket to ensure the vegetables stay crisp and beautifully charred without falling through the grates. It is an excellent choice for a post-workout meal or a simple family supper during the warmer months. Serve it directly from the bowl with a final scatter of fresh parsley for a burst of herbal flavour.
Ingredients for Grilled Lemon-Garlic Chicken with Leeks and Potatoes
1 lemon
3 garlic cloves, finely grated
1 1/2 teaspoons kosher salt
3/4 teaspoons smoked paprika
45ml olive oil, plus more for grill
3 boneless, skinless chicken thighs (about 450g ), halved
2 leeks (about 230g ), quartered, white and light green parts cut into 3" pieces
1 large red pepper, cut into 2"-thick strips
230g baby new potatoes, halved
1 1/2 cups parsley leaves with tender stems
A flat grill basket (about 13 1/2 x 8 1/2")
How to make Grilled Lemon-Garlic Chicken with Leeks and Potatoes
Prepare a grill for medium heat. Zest 2 teaspoons lemon zest off lemon and transfer to a large bowl. Cut off ends, then squeeze 1 tablespoon lemon juice into bowl with zest. Slice remaining lemon into thin rounds.
Whisk garlic, salt, paprika, and 45ml oil into lemon juice and zest. Add lemon slices, chicken, leeks, pepper, and potatoes and toss to coat.
Brush wires of grill basket with oil, then add chicken mixture. Arrange in an even layer and close basket. Place grill basket on grill, cover, and cook, turning once halfway through, until chicken is fully cooked through and vegetables are lightly charred, 20–25 minutes.
Transfer chicken mixture to a large bowl, add parsley, and toss to combine.
