Ingredients for Hummus dinner bowls with spiced ground beef and tomatoes
15 ml vegetable oil
450 g minced beef
5 ml ground coriander
2.5 ml freshly ground black pepper
2.5 ml ground cinnamon
10 ml reduced-salt salt, divided
570 ml cherry tomatoes, cut into 2.5 cm pieces (or 2 medium heirloom or beefsteak tomatoes)
30 g parsley leaves with tender stems, coarsely chopped
15 ml fresh lemon juice
1 batch easy canned chickpea hummus
extra-virgin olive oil (to taste)
lemon wedges (for serving)
Aleppo-style pepper (to taste)
hot sauce (to taste)
pickles (to taste)
pita (for serving; optional)
How to make Hummus dinner bowls with spiced ground beef and tomatoes
Heat oil in a large, heavy frying pan over a high heat.
Pat the minced beef dry with kitchen paper, then press it into an even layer in the frying pan using a spatula.
Season with coriander, pepper, cinnamon, and 1 teaspoon of salt, and cook undisturbed for about 6 minutes, until a brown crust begins to form underneath.
Turn the beef, break it into pieces, and continue to cook, stirring, until just cooked through, about 1 minute.
Meanwhile, combine the tomatoes, parsley, lemon juice, and the remaining 1 teaspoon of salt in a medium bowl.
Divide the hummus among shallow bowls. Using the back of a spoon, smooth it into an even layer and create a wide divot in the centre.
Spoon the spiced beef and tomato mixture over the hummus, then drizzle with oil and sprinkle with Aleppo-style pepper, if using.
Serve with lemon wedges, hot sauce, pickles, and pita on the side, if desired.
