This vibrant roast chicken with chickpeas and tomatoes is a fantastic option for a nutritious, high-protein weeknight dinner. The chicken is infused with a fragrant blend of smoked paprika and cumin, then roasted alongside juicy cherry tomatoes and earthy chickpeas until tender. Using bone-in chicken breasts ensures the meat remains succulent while the skin becomes beautifully golden and crisp under the high heat of the oven.
Perfect for those seeking a healthy yet satisfying meal, this one-tray wonder minimises washing up without compromising on flavour. The dish is finished with a cooling spiced yoghurt sauce and a generous scatter of fresh coriander, providing a bright contrast to the smoky pimentón. Serve it on its own for a low-carb option, or with a side of fluffy couscous to soak up the spiced juices.
