This classic prawns and grits recipe is the ultimate soul-soothing comfort food, elevated with a punchy kick of jalapeño and the richness of sharp white cheddar. By slow-cooking the grits for an hour, you achieve a beautifully creamy texture that provides the perfect base for succulent prawns and salty, sautéed sausage. It is a sophisticated take on a traditional coastal favourite, balancing the heat of the pepper with the cooling finish of fresh tarragon and single cream.
As a high-protein dish, this meal is as nutritious as it is indulgent, making it a fantastic choice for a hearty weekend brunch or a filling midweek dinner. The addition of a golden fried egg with a runny yolk creates a natural sauce that ties all the savoury flavours together. Serve it in deep bowls to capture every drop of the delicious beer and garlic-infused broth.
