This ultimate Caprese salad is a celebration of simple, high-quality ingredients, making it a standout high-protein starter or light lunch. By using a variety of heirloom tomatoes in different shapes and colours, you create a beautiful contrast in both texture and sweetness that far surpasses the standard supermarket variety. The secret to success lies in using creamy buffalo mozzarella at room temperature, which ensures a soft, velvety mouthfeel that pairs perfectly with the acidity of the fruit.
Taking the time to let the salad sit for half an hour is essential, as this allows the salt to draw out the fragrant juices, creating a natural dressing when mixed with the extra-virgin olive oil. Serve this vibrant platter with thick slices of toasted country bread to soak up the delicious pooling liquids. It is an effortless yet sophisticated dish that brings a taste of the Italian summer to your table.
