Winter Italian Chopped Salad

This winter Italian chopped salad is a vibrant celebration of seasonal textures and bold Mediterranean flavours. By roasting the chickpeas, pepperoni, and artichokes, you create a warm, savoury base that contrasts beautifully with the crisp radicchio and chilled iceberg lettuce. The dressing, brightened with fresh orange juice and fragrant oregano, ties the plate together with a zesty citrus lift that balances the richness of the provolone cheese and salty black olives.

Designed as a high-protein main, this hearty salad is an excellent choice for those seeking a nutritious yet deeply satisfying meal during the colder months. It works wonderfully as a standalone lunch or as a sophisticated side dish for a weekend gathering. The combination of fibre-rich pulses and lean protein ensures it is as nourishing as it is colourful, bringing a fresh, homemade touch to your winter repertoire.
