Bruschette with Chickpea Purée and Rocket

This vegan bruschetta with chickpea purée and rocket is a sophisticated yet simple starter that brings a fresh Mediterranean feel to the table. The highlight is the whipped chickpea topping, which achieves a silky, light consistency by removing the skins before blending. Paired with crisp, olive-oil-brushed bread and the peppery bite of fresh rocket, each mouthful offers a satisfying contrast of textures and bright, citrusy flavours.

As a nutritious plant-based option, this dish is perfect for a light lunch or as part of a sharing platter when entertaining guests. The chickpea purée can be prepared in advance, making it a convenient choice for busy hosting. Serve these toasts while the bread is still warm from the oven to ensure the best crunch against the creamy topping.
