Ingredients for Coconut-turmeric relish
40 g golden raisins
60 ml fresh lemon juice
4 garlic cloves, thinly sliced
80 ml extra-virgin olive oil
25 g unsweetened coconut flakes
1 Fresno chile, deseeded, finely chopped
4 cm piece ginger, peeled, finely grated
15 ml mustard seeds
2.5 ml ground turmeric
kosher salt (to taste)
freshly ground pepper (to taste)
How to make Coconut-turmeric relish
Combine the raisins and lemon juice in a small bowl and leave to soak for 15–20 minutes until the raisins are plump.
Meanwhile, combine the garlic, oil, and coconut in a small saucepan. Set the pan over medium-low heat and cook, swirling often, until the oil is bubbling and the garlic and coconut are golden, about 6–8 minutes.
Remove the pan from the heat immediately and stir in the chilli, ginger, mustard seeds, and turmeric.
Transfer the mixture to a heatproof measuring jug and leave to cool.
Once cooled, add the soaked raisins and lemon juice to the garlic mixture and toss to combine.
Season the relish with salt to taste.
