45ml miso paste
45ml mirin, plus more to taste
45ml unseasoned rice vinegar, plus more to taste
1 tablespoon soy sauce, plus more to taste
1/4 teaspoons kosher salt, plus more to taste
450g soba noodles
5 red radishes, thinly sliced
5 spring onions, trimmed, thinly sliced
110g smoked tofu, cubed
How to make Cold Soba Noodles with Miso and Smoked Tofu
Back to contentsWhisk ginger, miso paste, 45ml mirin, 3 tablespoons vinegar, 1 tablespoon soy sauce, and 1/4 teaspoons salt in a large bowl.
