This vibrant smashed cucumber salad is a refreshing vegan side dish that celebrates simple, bold flavours. Smacking the cucumbers allows the flesh to crack and creates craggy edges, which are perfect for soaking up the tangy rice vinegar and aromatic oil. It is a cooling, crunchy accompaniment that provides a wonderful contrast to richer main courses or spicy noodles.
Quick to prepare and naturally healthy, this dish is an excellent addition to your repertoire of plant-based recipes. The combination of toasted sesame seeds and sliced spring onions adds layers of texture, while the drizzle of chilli oil brings a gentle heat. Serve it immediately as part of an Asian-inspired spread or enjoy it as a light, hydrating snack on a warm afternoon.
